The best descriptions I've heard have been that product demos are like a Western Set on a backlot at the studio, whereas shipping product is the actual town with people living their lives in it. The trick is to make sure parts of the demo look really sketchy until you've got the real code/services to back it up about ready and deployed.
Alas, I couldn't find a great picture to capture this concept…
