To go light, you will need to turn on call forwarding on your smartphone using a contact that the app creates for you. (Note: your carrier must support call forwarding for this to be possible)
So you still need your smartphone to use it

Except they don't want that. They want to remain reachable in case of emergency but without all of the distractions. It's the phone version of the writing app that locks out your browser or whatever (or so @Yamikuronue has said). Some people just don't have the self control.
I was thinking about this sort of thing over the weekend as I (and several others) sat around our camp fire in (mostly) silence. It was really nice.

You've obviously not looked at the requirements to do that. You will get an IRS audit as part of the registration process, and you've got to follow some pretty strict rules in relation to trustees, auditable accounts, etc. It's tricky enough going to being a plain old non-profit…
