@cabrito yeah, fair enough. But on the other hand, the main control board also has MOSFETs that could short. They have zero control over the PSU. Although, it wouldn't be too difficult to install a failsafe fusible temperature link. Hell, the bed heater may already have one installed.
Regardless, the 2.25X over rated output already has me leery enough of the idea.

@cabrito is right ; it wouldn't be a bad idea to add a thermal fuse in series, just in case the other safeties fail.
Using a MOSFET to drive a second MOSFET is OK, but you need a voltage divider stage between the two, because most MOSFETs can't withstand 24 V of driving voltage. It also ensures that the gate of the second MOSFET isn't floating when the first one is turned off. I've not checked, maybe you can buy assembled modules that solve the problem.
Also, make sure you don't accidentally invert the signal, otherwise the regulation will go haywire.
I think that nominally the bed heater is 240W at 24V, which would put resistance at 2.4ohms. But that would make my heater output 540W at 36V, correct?
Correct. Note that it means your power supply needs to be able to output 15 A at 36 V, which is quite beefy. It would also be a good idea to use thicker wires than the original ones, since the peak current is 50% higher than it is at 24 V (even if the average current is lower, it's best to use pessimistic hypotheses). Same thing for connectors.
EDIT :
TL;DR: it can work if it's implemented carefully and you're reasonably sure the margins are sufficient. But I wouldn't recommend it if you're looking for a simple and safe solution.

There are. Some 3D printers have had issues with undersized MOSFETs so add-on modules are readily available that are designed to be driven by higher voltage control signals.
The wiring diagram for such MOSFET modules shows them as being driven directly from the heated bed output of the board.

That is not a problem. I have a number of power supplies that range up to 25A in both 36V and 48V. I used to use them for electronics projects and such. They are all good quality Meanwell power supplies. I'm not terribly worried about the power requirements. But considering there are mains powered beds available for ~$40 each, I don't think it is worth the worries.

To be fair, one of my requirements for hobby projects is "Doesn't cause me to get divorced". Good god, that would cost me more than I care to think about.

I'm in the process of building a whole printer enclosure thing to get them all away from drafts and to help with ABS and PETG prints. My thinking is that if I can bump up the bed heater output a bit I wouldn't have to worry about adding heaters to the enclosures.
- Point #1: There is absolutely no need to worry about adding a heater to the enclosure. I made a mockup by aluminum taping Polyisocyanurate insulation boards together and was easily able to hit 65C+ with no other heaters.
- Point #2: PLA does not like 65C+
- Point #3: Lots of modifications that I have done to my printers have been in PLA and completely go to shit at 65C+, drooping and ruining prints.
- Point #4: Cheap leftover webcams that I had in my spare parts boxes also do not like 65C+ and are now completely ruined. Time to either find USB cameras that are suitable for the task or find some way to isolate them from the heat.
I also started working out a plan to have the Raspberry Pis that I run Octoprint on control fans to help keep temperatures down. Then I went looking to see if there was an easier option.
$4/per for a temperature controlled relay to control a 12V fan. Easy peasy. The downside would be that I would lose the ability to set enclosure temp in my slicer and fire off a print job without going to the farthest reaches of the basement to set temperature. I am considering adding on a Prusa MMU in the near future so I could have 5 filaments on tap and if I can control the enclosure temperature with slicer settings then I would potentially be able to have 8 filaments at the ready for printing (5 in the MMU, 2 in the printer I am setting up for dual extrusion, and one more in the Longer LK4 that I am planning on leaving stock). That might go up once I get my HyperCube Evolution finished, assuming that I ever have time to do so.

The past month has been eventful in the 3D printing realm.
So I mentioned previously that I wanted to pick up a MMU from Prusa. Well I currently have one on order, and a MK3S also. A client, who is also a good friend, wanted their logo printed up to display in his office. Their logo is basically two colors, but to make it in to an object and also have their business name I also needed black and white. For a one-off that's not a big deal. My dual extruder machine is up and running and based on how it would need to be printed it amounted to one complete filament change. Print the white base with the black letters of the business name, then change filaments and print the logo. He asked if I would print several more and I said no. Stuff like that is fine for a one-off but I wasn't going to do it on an ongoing basis until I got a MMU. So they offered to buy a MMU and a MK3S to go with it if I would print up a few more. No problem.
Around the same time my wife's uncle (who is an unnamed partner in a major architectural and engineering firm and has done work on projects as famous as the Burj Khalifa) was over one night and asked to see my 3D printing area. While discussing it he mentioned how the firm that currently does their 3D printing of models to show clients is amazingly unreliable. That led to him asking me if I wanted to print some for them when it came up. I initially said no, I had enough other shit going on. Then he made me an offer I couldn't refuse that did not involve me waking up to a horse head in my bed. So long story short I've printed a couple for them and that will more than pay for a larger format printer and has necessitated the formation of another LLC. The price that architectural firms pay for 3D printing is fucking amazing.

Yeah, one of the higher ups at the company my brother works for pays for his HAAS CNC machine by running 1-2 projects a month (about 5-10 days a month) for people (just people listing projects on a cnc forum, so not even business contracts). I can't recall the exact model he has, but it was not one of their "cheap" ones.
