Actually, some of the function keys on my keyboard become media keys when I use the Fn key. They are not separate keys though.

I think you're overestimating the power of the mods here if you think they can delete an entire keyboard layout from existence.

Can you show me an ergo mechanical keyboard that's structured similar to the Microsoft Natural Ergonomic 4000? I'm looking for a replacement for when mine inevitably goes out.

Not as such, because nobody makes 'em like that. If you're willing to compromise in a way, you could look at an Ergodox, but they're expensive.
I used to like that kind of keyboard, but I find that mechanical keys do more for me--if it came down to a choice between those two things, I'd choose mechanical keys.
I really want one of those Ergodoxes, too, but I'm not in a hurry to spend $200-250.

Well, there's the fact that all the studies claiming it's faster were performed by Dvorak himself while he was trying to promote his new layout

Can't you reprogram it to do something useful?
I do not need extra functionality, yes I have paid for the entire keyboard but I do not have to use it all. I just like the keyboard itself a lot.

No argument there. My personal anecdatum point: the improvement in my typing speed when switching from QWERTY to Dvorak was insignificant.
On the other hand: the improvement in typing comfort (no more pain in my fingers and hands at the end of a typical workday, no more wrist pain) was definitely significant.
A much shorter "travel distance" for your fingers really adds up when typing a lot.

I didn't have a good reason for switching to Dvorak, I just did it for the heck of it one day. My typing speed increased almost twofold (from 30 to 60 words per minute) when I switched. Unsurprisingly, it took many months to get to that point.
I wasn't all that good at typing in Qwerty to begin with due to bad habits that I was never quite able to unlearn at the time. Learning Dvorak actually helped me improve my Qwerty typing in the long run.

If you have a bad typing technique, your speed is going to suck no matter what keyboard layout you use.
ISTM that by learning Dvorak, you not only learned a new keyboard layout, but also improved your technique. By restarting from scratch, you also stopped the bad habits and learned new and good habits that eventually replaced your bad habits.
I already touch-typed on QWERTY. After getting used to the Dvorak layout, my speed improved just a little, but not by a significant amount.

Of course! I use ⇧ Shift on almost every letter to get correct capitalization. It's like bench pressing for my pinkie fingers.
Come to think of it, that might very well be the cause of my finger- and wristpain... I could have just switched off caps lock instead of learning Dvorak!

I don't understand why you would want a keyboard without markings on the keys. Even if you're a proficient touch typist to the extent where it's no disadvantage, what possible advantage does it have?
The only one I can think of is bragging rights, which is a pretty shitty reason to buy a less usable keyboard
