I can sort of tell what you're describing, but really it turned out fine. I think I may have also over-blended the whipped cream a little bit, because it kind of leaves a film of butter coating the spoon, and I think it's also tending to melt a little quicker as a result. Overall, though, I'd call it a success, and I like it enough that I'm going to try it again with corn syrup and see if I can improve on the first time.

I just discovered a local hot sauce company, and they make the best smoked habanero sauce I've ever tried. Yes it's hot, but it legitimately tastes good, too. According to their website, my local grocery store carries their products, but I couldn't find them. I put in an order through their site, for their LAVA Smoked Habanero sauce, Red Reaper Hot Sauce, and Spicy BBQ Sauce.
@anotherusername might be interested in this, too.
They also have a few oddities like Carolina Reaper ketchup and Carolina Reaper ranch...

I can't remember where I saw it, possibly on Good Eats, but there was a whole explanation about crystal formation in foods and how corn syrup can help retard their formation. Corn syrup is like magic when making candies. Some types of candy tend to "break" and rapidly form crystals when you don't want them to. Peanut brittle and the like are a good example. But add some corn syrup and that problem goes away pretty much entirely. Pretty amazing stuff.

I can't remember where I saw it, possibly on Good Eats, but there was a whole explanation about crystal formation in foods and how corn syrup can help retard their formation. I tried it again with corn syrup, but it wasn't the only thing that I changed. For starters, I used a mixer instead of a blender, because I felt like the blender didn't do a good job of agitating the whipped cream once it started to approach the hard peak stage, resulting in at least some of it becoming over-mixed; also I may have just over-mixed it in general, so this time I stopped mixing the whipped cream as soon as I felt like it made what I reasonably thought could be called "stiff peaks." I then used the corn syrup instead of honey, and I accidentally forgot the vanilla (although I doubt that affected the outcome, and couldn't really tell by tasting it).
The single biggest change was that drastically more air was incorporated into the mix, increasing the volume of the batch probably by about 25%. I assume that this was mainly because of the difference in whipping the cream. After frozen, it was hard to say whether the crystals were any different. It did not, however, leave a greasy film of butter on the spoon when eating it, like the previous batch did, which again points to the whipped cream being better.

Food chemistry is tricky stuff. Unless you heated the honey I don't think it would give you the same benefits.
I don't know for certain though. I am not a food chemist and I did not stay at a Holiday Inn Express last night. But I think the difference in moisture content would be the major difference.

@Polygeekery well, like I said, I wasn't sure if there was a noticeable difference in the crystals (maybe not without comparing them directly side-by-side, at least), and there were too many variables that I changed to really tell if the major difference that I did notice had anything to do with the corn syrup. It's likely that the corn syrup does make a difference, but it wasn't one that I noticed and was able to isolate as being caused by the corn syrup.

Got my order in. The Smoked Habanero sauce is delicious. The Red Reaper sauce is nothing but pain and regret. The BBQ sauce is mild and tastes really good on pizza.

The way I spread them out I went to two cookie sheets. The bottom one didn't quite cook tall the way. They were still a bit sticky so I put them back in the oven at 150. Yumm!

I'm afraid I'm conventional when it comes to pizza. Standard base, standard sauce (or at least involving tomato and classic Italian herbs). Just... not until a few days from now. Got the Xmas multi-day food blowout to endure. (Today was fish and pork. Tomorrow, a glorious couple of full ribs of beef...)

Made another set of stupid-easy Jello chocolate pudding pies yesterday, and once my stand mixer bowl dries from the washing I'm gonna be giving my best effort at making whipped cream to top them with. If I don't fuck it up, might take one up to the family gathering tomorrow.

These aren't made with regular pie crusts. One's an Oreo crumble crust, the other's a graham cracker crumble.
Whipped cream experiment went well. Doubled the recipe I found, managed to judge it well enough that it didn't get overbeaten and start to separate into butter and whatnot. Doubled recipe made enough to cover one pie plus a little extra (which went into a small bowl, covered with clingwrap, possibly to eat later as an airy dessert). Second pie will have to either wait until I wash the stuff again (since I had tossed the whisk attachment and measuring devices into the sink after the whipping process but before putting it on the pie) or be eaten un-creamed.
