Some people I know have a chili cookoff every January. Because we have people with certain food allergies in attendance, each entrant is identified as to the type of "protein" in it: beef, pork, beef+pork, chicken, veggie.
I keep wanting to work up a recipe for a chili using grilled tilapia, just so they have to add a category.

Tilapia is good if you need a mild fish to season. It doesn't have a strong flavor of it's own, so it's easy to give a flavor to. Salmon, on the other hand, has a distinct flavor.
