Use some laser guns rather paintball guns, and couple the receptors on each go-kart with the power, so that hitting a target slows down your opponent for a few seconds. This way you get a real bonus out of shooting someone, and you can truly balance driving vs. shooting.
You can then introduce how many Mario-like tweaks you want, different targets that slow you for different time spans, slow-down time that changes with your performance (so the last one is harder to freeze than the first one, to bunch up the field), or even have targets that actively brake you for extra fun! Or make it a team-race where hitting a special target on your team mate actually speeds them up rather than down...
(it's probably easier to do that coupling with electric go-karts because everything is already electronic, but it's probably doable on a regular go-kart as well)
You'd probably have to have a gokart with drive by wire to make it work, but if that's the case then it'd be fairly easy to implement.
Having various different effects by different targets probably wildly overestimates how hard it is to hit targets when both shooter and target is on moving platforms, but having different kinds of shots would perhaps be possible, for varying effects and implementing team tactics with classes like tank, healer, crowd control and such.

@Carnage No need for full drive-by-wire. A simple solenoid to disconnect the throttle for a few seconds (and possibly another for controlling a simpler limiter) would be enough. You don't really want to mess with anything except the throttle anyway.
Also having different targets would still be kind of fun. They would be hard to hit intentionally, so it would add a factor of chance (they'd all be negative, just sometimes you'd hit half second braking while other you'd hit five second power reduction…)

@Carnage I agree that it's probably easier with drive-by-wire karts, which is why I mentioned electric go-karts.
I remember seeing an article about them recently and apparently they can be even more fun than regular ones because you can pack more punch into the same framework (or even lighter), and not necessarily more expensive either. And the battery isn't that much of an issue since on most circuits each kart is only driven for a fraction of the time (each time I've been go-karting there were lanes full of unused go-karts, even when we were a large group using the whole facility), it can be plugged in the rest of the time. Of course you lose the sound and smell of an engine, which for some might be a turn off, but equally might be a draw for others...
Anyway.
I also agree that targets are going to be hard to hit and you probably at the very least need to make them much larger than for regular laser guns. But I assume the targets themselves are probably just pieces of plastic that funnel enough light when a laser hits to trigger a sensor, so they can probably easily be made as big as you want. If you put a CD-sized one on the back of the driver's seat (or on their helmet!), it should be reasonably easy to hit it.
You could also have fixed targets on the track itself, they would be easier to hit, and they could either speed you up, or set some sort of virtual road-block (i.e. just a sensor across the track) that would slow down the next kart to cross it, or anything else.

I think that definitely would be the safer option, but for reasonably good drivers it might be fun to have a more annoying interference with driving. A target that hits the brakes could be huge fun (and not that dangerous, on smaller go-karts even if you go full speed and hit a wall full front it's not that bad... you're not going to get anywhere near the 50 G that Romain Grosjean went through last week-end
). Another target that turns the wheel a bit might add just enough complication to make you miss the correct line. If you want to go even further, with drive-by-wire you could even have a target that reverses right and left (that one would probably be too much) or weirder effects (create some sorts of virtual bumps where driving over highlighted patches of track turn your wheel).
It's not quite a full Mario Kart, there are some effects you'll never be able to reproduce, but it could get fairly close, and with modern electronics it probably would be reasonably cheap (above the base cost of go-karts and the track itself, of course) to do, so it's not entirely impossible?

@HardwareGeek I'm pretty sure he wouldn't be there (or at least not in the state he currently is) if he had been wearing jeans, given how he was engulfed in fire. It's also unlikely he's ever going to reuse those specific overalls anyway, for the same reason, so nobody is going to check what's left in them...
I also think that if anyone claims they wouldn't shit their pants if in the same situation, you can safely call them a liar.

@Mingan He gave an interview to a French TV today (here is an article in French about it).
He says that after removing his seat belt he noticed the steering wheel was gone (!) and that he only saw orange in his visor because of the fire. While putting his hands on the car to get out he could feel them burning, and didn't know he was out until he felt someone dragging him, which from pictures is weird because he clearly climbs out by himself, but with his visor likely obscured and his car upside down he probably couldn't tell where he was exactly. He was in the fire for a bit under 30 s.
He ends up with burns on his hands and a sprained ankle.

I think in Formula One he will be remembered for this accident and not much more. He had a promising career start some years back, but never managed to become a truly impressive driver (I mean, apart from being a F1 driver which by itself is already pretty impressive!) and never achieved much. He hasn't got a contract for next year and given he's not very young (that is, for a top athlete!) I don't see any other team calling him back in the future except maybe as a test/replacement driver.

Everyone's already wearing helmets, so it's technically safe.
But you'd have to put everyone through firearms handling training to keep the offgame areas safe. Those things are a serious hazard to eyesight if mishandled while goggles are off. Also maybe a hazard to observers, unless the crowd is kept far from the track.
The same applies to paintball guns though.
Also, there's the technical challenge of telling apart hits from the engine vibrations and similar noise. You can't really raise the power of the BBs either, or they become too hazardous for use again.

Yes, but I've never seen it done on laser guns, so I assume that businesses running those events have decided that it's probably not worth it (i.e. too expensive/maintenance-intensive compared to the potential of additional business gained thanks to this feature)?
Though this might also be because most laser gun events I've been in have a loud music, so small noises would probably be lost. But tactile feedback when you've been hit would be a nice thing to have, you can often get hit without really noticing it (e.g. from behind) and not really realise it immediately (the light on your harness change, but in the heat of things I rarely look at my own kit to check its colour).

Joking aside, I'd also do a doubletake, and with the speed with which that plane was approaching it might be too late by then.
