@Zecc That said, about 99.9% of the mozzarella in the US is of the "low-moisture part-skim milk" sort, the vast majority of which is pre-shredded. I'd venture to say that most USAians don't even know mozzarella fresca exists, much less the only real mozzarella, mozzarella di bufala.

Here in NL, the only mozzarella I'd recognize as such comes as ~200g spheres submerged in fluid. It doesn't cut easily, and is better torn to pieces by hand. I think I've seen small spheres as well (possibly intended for cocktail use or in salads) but I don't recall whether they were submerged. They'd have to be though, or they'd dry out.

@HardwareGeek Yeah, you want something a little drier for pizza or it becomes soggy real quick.
You can get an intermediate form over here though: rectangular and vacuumpacked with only the tiniest amount of moisture:
