The valves aren't perfect AIUI.
Also the valves will affect the rate of airflow, hence make the Bagpipe sounds different or unplayable at all.

@masonwheeler is probably confusing chitlins with menudo, which is made from beef tripe. It's considered a hangover remedy, probably because you have to be pretty wasted to wake up the night after a drinking binge and say "what I really need right now is some soup made from a cow's stomach".

More like a delicacy. Even people from the South normally only cook them during the Holidays.
