Tail length?
If both head and tail are absent, I suspect the amount of meat on the hind leg is a clue. But I'm no biologist.
Years back I was in a French supermarket with my sister and she initially misidentified the whole rabbit for a cow foetus.

@PleegWat I don't remember the details, but I remember that (assuming the highly distinctive features like head, tail or paws are removed, but that would likely be the case if the animal was sold as "ready to cook" or so -- even more so if the seller was trying to pass cat for rabbit!) it was apparently fairly hard and required some very accurate knowledge of both animals' anatomies.
Edit: and you sufficiently tickled my curiosity that I looked again, I think it was this post or something similar:
