At my previous job I had to do a payment processing integration.
My only requirement for the system was : I don't want to have access to the payment info.
The payment terminal was not actually connected to the PC. I was sending the payment request to a central server, which would pass the request to the terminal, than get back to me with the result.
I couldn't be held responsible if there was a security breach :)
Edit : I call that "security by ignorance"
