You tried to make a joke, but the reality is exactly that - in single payer system, there is one entity that pays for everyone's medical bills - it's called the state, and it's funded entirely from taxes.

Well, yes and no. Unlike most other "taxes", this one ends up in a fund for exactly one purpose. They actually use your healthcare payments exclusively for funding the healthcare system, not for increasing the government budget in general.
That's why I object to people calling payments for state-run insurance taxes. They're not, there's an important qualitative difference.

The NHS is funded from the general taxation pot. It used to be exclusively National Insurance, but now it's all one fund

No, it's free at the point of care to all citizens even if they've never paid anything in their whole lives.

That's different from the German model, then. Even if you're unemployed, you're still technically paying insurance; the state just does that for you as part of your unemployment benefits.

Until you're out of cash and make a special one-time bill that lets you transfer money from one fund to another. Kinda like they did in Poland in 2013, taking money out of individual people's private personal retirement funds to pay out pensions of currently retired people.
If some payment is obligatory and goes to any branch of government, it's a tax. No matter if it's called a health insurance premium, social insurance contribution, TV subscription, court stamps, or driver's license replacement fee.
