@Polygeekery
I think you should update your sig to "Such a sadistic bastard". Though maybe throw an actual @accalia in there as well, in homage to the signature you'd be ripping off. :P

cheese
Is one thing that should definitely be refrigerated
Depends on the cheese. For some cheeses, leaving them in a warmer place can be advised to encourage ripening. (I don't like those types of cheeses, FWIW, but I know that they're usually sold in a state where they need some extra time to develop their peak flavour.)

bread ... actually lasts less time in the fridge than in a cool cupboard, weirdly
Depends what you mean by lasts. It goes stale quicker in the fridge (apparently because the colder temperature speeds up the recrystallisation of starch), but stale bread is still edible, for a given value of edible (and if you only use it for toast, it's pretty well ok). Anecdotally, at least, it lasts a lot longer without going mouldy in the fridge.

Except for bread, which actually lasts less time in the fridge than in a cool cupboard, weirdly
That's a matter of humidity. Fridges are relatively high-humidity places (hence all the gizmos that are added to control that, and defrosting etc.), and a good pantry or larder should be much dryer.
Actually, a lot (I almost said "all", but there are some exceptions) of stuff that we put in fridges would keep better in a proper pantry, i.e. cool but not cold and well ventilated (i.e. dry) -- which what all the labels are telling us! "Store in a cool dry place"! But such a place is difficult to maintain in good condition all year long and many places simply cannot get one, so we all learn to put stuff in fridge by default...

in my fridge
I've never been able to find a clear consensus for shelf vs. fridge. Fridge is where my parents always kept it, and it works just fine (no old maids), so I keep it there too.

@Unperverted-Vixen Are we talking kernels for popping or ready-made popcorn? I guess it's hard to imagine that chilling it could make the latter any worse, but I definitely want my popcorn fresh and hot.

@CarrieVS Kernels for popping.

@Unperverted-Vixen I'm very glad to hear it. No-one ought to be eating the stuff out of the foil packets.
I keep mine in the cupboard, but that's because it never occurred to me not to. On thinking about it, I'd be concerned it might get damp; it seems nearly indestructible if kept dry. I'd never have thought to consider whether it might make better popcorn if it was kept chilled, I can't see any intuitive reason why.

I read that as 'kernels for pooping' initially
