As i heard it it derived from mideival times where it was common to cut the first and second fingers off the hands of captured enemy archers (thereby making it so they couldn't use a bow anymore)

i got mine for testing regional filters, but i keep it to access blocked sites when i am at robotics (at the local highschool)
a non exclusive list of sites that are blocked:
- Google.com (but not bing or yahoo)
- duckduckgo
- Youtube.com
- oracle.com (to get Java which is needed for the robot stuff)
- G+ (but not facebook)
- github
A non exclusive list of things i am told is not blocked (most of these i have not confirmed):
- most porn sites,
- most torrent sites sites
- tor entry points
- bit torrent
- anonymous HTTP proxies

Supposedly from the Battle of Agincourt. Sadly that is a myth, and indeed that meaning attached to the gesture is comparatively modern.
I'm even told Winston Churchill originally did his famous V for victory sign palm inwards, and it had to be pointed out to him that that was what the kids were doing these days instead of thumbing their noses at one another. I can't quite remember where I heard that story though, so take it with a pinch of salt.
I've never head it called showing your bowfingers. Everyone I know just calls it (showing/giving/etc) two fingers.
It's disappointing when those charming little stories turn out to be false. This one has long been on my list of things to rectify upon obtaining a reliable time machine. Of course, no doubt that will mess with history in all sorts of exciting and unanticipated ways. Probably the Nazis will win WWII. (We've already got the WWII connection with the Churchill thing... maybe if it had been a well-known insult for much longer he wouldn't have done it at all, palm in or out, and somehow that will have a series of knock-on effects...)

Besides, I'm wondering if it's possible to shoot a bow without your index or middle fingers using a modified Mongolian draw...(i.e the bowstring is pinched between your thumb and palm, with the ring and pinky fingers wrapped over the thumb).

That feels very awkward (not sure that only the ring finger wouldn't be more successful), I'd be surprised if you couldn't draw any bow that way, with practice, but surprised if you could draw a powerful bow and hold it securely enough to be accurate.
But who knows? I've seen a person with only one hand draw a bow (albeit he could barely get any draw on it at all, but AFAIK he had had little or no practice).

There are mechanical releases today. I'm sure someone could have (or did) come up with something similar.

It'd be easy to adapt a crossbow trigger mechanism to be a standalone handheld device, so I'm sure it could have been done and probably was.
Really, the key thing with the English archers was numbers - several thousand peasants are cheaper and more effective than a few hundred mounted knights.
Also the habit of killing French prisoners instead of ransoming them may have slightly annoyed them.

Being on the losing end of a battle was never fun for a non-knight at any time during the medæval period; everyone knew the ransom for you would be rubbish, so nobody bothered to capture you and instead went straight to things like summary execution. That it got extended in the other direction from time to time was hardly surprising; after all, would you want to be on the receiving end of a that sort of thing and be told that it's never allowed to get your own back first sometimes?

Also stakes, spiked at both ends and stuck in the ground. Nasty but effective against a cavalry charge. And rain. Plate armour and thick mud aren't a good combination.
It rained at Crecy too, and the French (actually Genoese mercenaries) crossbows were too wet to work. It's amazing how often the weather plays a decisive role in these things.
