The security part is that they're not stored anywhere on the card except visually. It can't be taken from a chip or stripe reader, unless it has a camera and OCR, unless you put electrical tape over it.
Nor is it embossed which means mechanical paper imprinters don't capture it .

The kitchen table is all polished wood – it's an early-twentieth-century, no-nails-sanding-in, no-sitting-down-and-not-taking-out décor. Full-text search is implemented completely differently for MyISAM and InnoDB tables. Of course, no-one uses MyISAM any more (even MySQL users know not to use MyISAM these days) but for a long time you couldn't do full-text search on InnoDB tables so the MyISAM ones lingered.
You can create your own stopword list for InnoDB tables by adding another table to contain them. You'll probably want to because the default list doesn't include "and".
