So I went to reset my password via email, got the link, clicked it and got this:

In a way, this is the best you can do anyway: just type in arbitrary characters likeG%fd67$-hEW
, log in and do your stuff.The next time you want to log in simply ask for another password-reset email.
The only attack vector then is the email itself, so if Discourse does not use SSL for mail transport, it could be intercepted.

Even with preview hidden, text still gets cut off by the toolbar

Well, now only the top line is missing. Not like 2 or 3 of them.
Which means you can put a linebreak first, write below that, remove it once you're done and then post.

Yep, that seems to be it. The next question is how it switched, because I have the browser itself set to prefer the mobile version of websites (ie. it sends a useragent string consistent with mobile browsers)

They may have sniffed it and decided it was a tablet or a desktop, which start on desktop mode.

I certainly had it set to mobile (I rarely change it unless the mobile version of a site is appallingly limited), so there must've been some caching that flipped it to desktop when I opened Discourse
