And we can apparently close polls. Well I can see a button under them that says "Close Poll", never dared to click it.

The only difference between an open poll and a closed poll is that a closed poll says closed in the title.

Having the title say Closed stops people from voting.

It might stop some people from voting, but I'm sure people here would try anyway (if they even bothered reading the title).
Edit: So it does actually prevent people from voting. Therefore, saying "closed" in the title is not the only difference.

Remember the poll plugin relies on thread titles to know whether something is a poll or not. So changing the title to anything that doesn't start with "Poll:" is probably the official way to close polls.

What? Again? It's already in there once. Last couple of para's.:
Polls may be closed by changing the start of the topic to "Closed Poll: " (for which a button is provided to simplify the task.) Closed polls may be reopened at any time.
Changing the start of the subject to anything other than "Poll: " or "Closed Poll: " will disable the poll code generation and will result in the options being rendered as a regular list.

Seems like it maybe ought to be added to the Leader description, though. It's implied by the "rename" power, but the ramifications of that are... not very discoverable.

The storage used to retain the counts isn't reclaimed, but whether the results can be retrieved in any meaningful manner on a topic that's gone from Poll -> Not-a-poll -> Poll hasn't been tested to my knowledge.
Up in the air is
- Is Not-a-poll -> Poll for a topic that's previously been a poll possible? (It's not for a Topic that didn't start off as a poll)
- If so, what happens if you mess with the options before making it a poll again (Since options cannot be added to/deleted in a poll even by admins after 5 mins after creation.)

The results are still visible after closing a poll, and yes you can turn not-a-poll into a poll, and the previous results are kept. There are 3 states: Poll, Closed Poll, anything else.
No idea what happens with the results if you "unpollify" a topic, edit the first list and "repollify" it.
