Apparently, if you're making marzipan then a very small proportion of bitter almonds (1 nut per 100 g of sweet almonds?) is extremely nice. I can't confirm this directly.
I could not say for directly adding bitter almonds (it's not something you usually control as such!), but adding a drop or two of bitter almond extract to, well, about anything almond-based does taste very nice. Especially in sweet dishes, where there is usually nothing bitter, it adds some complexity (?).
