I don't understand why someone would become vegetarian and then decide "oh, well now I can't eat meat, I may as well punish myself with some hideous flesh simulacra, rather than eating some rather snazzy yams or whatever..."

Oh, I hate eating meat, but I want products that are just like their meat counterparts only without the meat, the texture of cardboard and the taste of pseudo-meat. Yummy!
My wife was vegetarian for a while. Luckily she stopped that nonsense. I still remember one conversation when I grilled a burger for me and (reheated?) a "veggie burger" for her.
Wife: "You should try one of these, they taste really good and almost exactly like a real burger."
Me: - takes bite - "No, it fucking doesn't. That is not even a streaky facsimile of a real burger. You have been off meat too long.."

Some people go vegetarian for reasons other than "I don't want to eat animals". If you are doing it because it helps you lower weight/cholesterol/whatever else* then wanting a fake meat like product can make sense.
* I have extended family that did it for this reason, but generally the reason the switch helped is due to portion control issues

Another anecdote: Years ago we took our dogs to a different vet than we do now. The day I left them is when she suggested putting our dogs on a vegetarian diet because, "It is more natural for the dogs." I was absolutely floored that she made such a stupid statement. I asked her (much to my wife's chagrin), "So, are those pointy teeth in their mouth for eating fucking carrots?" I then asked to leave and to take their records with me.
She was mortified, and yes I do curse that much IRL...

It takes a while to adapt to not having a conventional "entree"?
We ate fake meat for a little while, but decided:
- it tastes odd
- it's kinda expensive
- the soy-estrogen thing wasn't snazzy.
- the crock-pot can turn cheap meat into good food.
