The sauce is mainly palmoil and pulp. You can use legs and wings. Whatever floats your boat.
The green isn't spinage but sakasaka. The dish is called moambe.

Sichuan peppercorns are fun. I tried my hand at a recipe which involved frying them in a wok with some chicken. Damn near had to evacuate the kitchen...

It was a mixture of sichuan peppercorns and hot oil. Hot enough to vaporize the 'active ingredients'. No chilli was required. If you are unsure of what occurs, then I highly recommend recreating the experiment as described.

Do you mean hot oil as in spicy? Or temperature?
If spicy, then it was infused with chili pepper.
If temperature, I guess I can probably imagine the result of inhaling the active ingredients. Although you're supposed to add those last, near the very end of the cooking, so they're really not supposed to get that hot...
