We're going to Bruges to look at the historic sites. Apparently they have lots of nice chocolate and beer though, so it might not be too harrowing.

Lots.
There is a chocolate museum if you like that. Never been there myself.
Bruges' centre is small, no need for transportation unless you want to visit things outside of the center. So stay away from the segways and other silly stuff. Locals hate those people with a vengeance. A horse carriage or boat tour can be nice but not necessary. You can easily get around walking.
DON'T sit down on the market square on a terrace, they try to add up charges and they are already expensive. There are more then enough good bars and restaurants in the center to put up with that.
Word of mouth is that the historium is not worth the money. The other museums are good if that is your cup of tea.
If you're staying longer you can venture outside the center. Close by Damme is worth passing by. Very small village. The beauty is in the back streets, don't only walk up and down main street. Walk around the village over the old fortification. If you don't mind the stairs you can climb the tower too.
If you like tasting Belgian Beers I can advise the pub (café) "Brugs Beertje". Big choice of beers. A good place for both tourists and locals. The biggest shopping streets are between the market and Sand Square ('t Zand for natives). Send your other half in that direction and wait for her there while you try to make it across the entire range of beers offered their. No offence but you won't make it half-way.
And with that I think I saved your marriage.

We're going to Bruges to look at the historic sites.
They've got some awesome art. Really good food and beer too. Definitely stick to walking (or weaving from side to side later in the day) when going around the city centre, and the boat and horse rides are fun if the weather's good.

Except for the killing, the boredom and profanity of the main character, the midget and the general absence of film crews and Colin (appearently a reason to watch any movie).
But yes the scenes are really shot in Brughes and little to nothing was altered. An yes you can climb the Belfry towers 366 stairs for €5.

My then-fiance was pissed at me for years that we spent so much time in an art museum that we missed the lace museum. Bruges was historically an important center for making lace, and they allegedly (not having seen it myself) have a great museum about it, if your wife (or you) is into that sort of thing.

Hmm I don't know about buttons. Sounds like you would like In Flanders Fields in Ieper about world war 1. But Ieper is almost a 1hour drive. If you go that way time your visit so you can see the last post. Everyday at 8 I think.

Almost forgot: in Brughes or Knokke shops are mostly open on Sunday. If you have that really expensive taste Knokke-Zoute is your thing. Or the place to stay clear off.

- If you like to spend too much for the amount of food you get: Hertog Jan and De Karmeliet have 3 Michelin stars and are both in Brughes
- I almost forgot Staminee De Garre, that can not be.
- The De Halve Maan (half moon) Brewery is worth a visit, if only that the admission includes a tasting of their nice beer.
